Macrobiotic Nutrition is founded upon the goal of bringing homeostasis or balance to the body and mind through eating a well-balanced, local, organic and plant-based diet. Preparing and eating healthy food can be overwhelming, especially given the time constraints most of us face today, but it doesn't have to be. Yasuo Mori, a Shiatsu Master from Japan who has completed extensive studies in macrobiotic nutrition and has been in practice since 1974, breaks down the most essential principles and components of a macrobiotic diet and shares his ingeniously simple solution to everyday nutrition: Chi Soup. Chi Soup is an incredibly healthy, one-pot meal recipe that Mr. Mori has developed for maintaining optimal health using Macrobiotic Nutrition principles as its foundation.

In this creative and informative class, we will learn:
• The history and foundational principles of macrobiotic nutrition
• How to harness the concepts of yin and yang to assess the foods we eat
• How to identify acid forming and alkaline forming foods and the affects of the pH scale on the human body
• The importance of mastication (chewing) and how to do it properly
• The best cooking methods and tools to extract and preserve the highest nutritional content of food
• The best foods to incorporate into your diet – and the ones to avoid
• How to incorporate nutritional balance into your everyday life - without giving up everything you love!
• A complete explanation of ingredients and demonstration of cooking methods used to create the optimal one-pot nutrition solution: Chi Soup
• Additional lifestyle suggestions practiced by Mr. Mori for optimal health and longevity

Health concerns/conditions that can be greatly improved by following a macrobiotic diet include:
• Insomnia
• Chronic fatigue
• Sugar and other food cravings
• Menstrual pain (dysmenorrhea)
• Infertility
• Poor and/or painful digestion
• Nutritional imbalance
• Depression
• Poor skin, hair and/or nail quality
• Inadequate circulation
• Poor blood quality

This class is designed to make Macrobiotic Nutrition more approachable and to teach you how to easily incorporate it into your life to create balance. The class will culminate in a round table discussion around a shared meal - Mr. Mori will serve you a fresh bowl of delicious, nutritious Chi Soup so you experience it for yourself. He will also field any additional questions you may have during a casual Q&A session.

In addition to a delicious bowl of Chi Soup, tuition includes a full-color instructional DVD and a comprehensive handout with a complete resource guide for Chi Soup ingredients and further studies in Macrobiotic Nutrition.

Shiatsu, or "finger pressure", is a traditional Japanese form of bodywork that uses gentle pressure applied to specific areas of the body through a channel system to improve energy, or "Chi" flow and restore the body, mind and spirit to a natural state of balance. It stimulates the healing of injuries and improves systems of poor health such as chronic pain, stress, insomnia and other conditions not effectively treated by Western medical practices. Students will gain an understanding of "Chi", the principles of yin and yang, assessment and palpating skills and will learn a comprehensive Shiatsu 1 protocol to address the feet, legs, arms, shoulders, neck and back. A detailed handout and instructional DVD will be provided to each student. NCBTMB Approved.
